# Things I Learned This Week

* A “[mom-and-pop](https://www.google.com/search?q=mom-and-pop)” is a colloquial term for a small, independent business/store owned and operated by a family or couple.
* [茅台酒](https://www.google.com/search?q=茅台酒) 是中國最具代表性的醬香型白酒，產自 [貴州省茅台鎮](https://www.google.com/maps?q=貴州省茅台鎮)。它主要以高粱和小麥酒麴為原料，遵循「12987」工藝：一年週期、兩次投料、九次蒸煮、八次發酵、七次取酒，並需陳放數年後勾調。經典版本的酒精濃度為 53% ABV (Alcohol by Volume)，恰好落在水與乙醇的共沸點，氫鍵結合力最強，分子結合最緊密，口感因此醇厚而不烈。
* [荷蘭病](https://www.google.com/search?q=荷蘭病)（Dutch Disease）是一個經濟學名詞，描述一個國家因為突然發現或大量出口某種天然資源（如石油、天然氣、礦產），導致其他產業衰退的現象。1960 年代，荷蘭在北海發現了格羅寧根（Groningen）天然氣田，開始大量開採並外銷。荷蘭盾隨之升值，導致製造業開始「生病」：工廠萎縮、勞力與資金被吸往天然氣產業。最終，靠天然氣賺了大錢的荷蘭，反而賠上了自己的製造業根基。
