--- comments: true tags: - dessert - claire-saffitz --- # :chestnut: Pecan Brittle ![Pecan Brittle][1]{ loading=lazy } | :timer_clock: Total Time | |:-----------------------: | | 2.00 hours | ## :salt: Ingredients - :chestnut: 142 g pecans - :cup_with_straw: 0.5 tsp baking soda - :salt: 0.5 tsp salt - :candy: 150 g granulated sugar - :butter: 57 g unsalted butter - :droplet: some water ## :cooking: Cookware - 1 small container - 1 saucepan - 1 sheet pan - 1 parchment paper ## :pencil: Instructions ### Step 1 [Toast][2] the coarsely chopped pecans. ### Step 2 Combine the baking soda and salt in a small container and mix. ### Step 3 Add granulated sugar and unsalted butter to a saucepan. Add a little bit of water to help bind everything together. ### Step 4 Stir in the beginning to encourage the sugar to dissolve into the butter until the mixture comes to a boil. ### Step 5 Switch to swirling to even out the heat and temperature and prevent crystallization. ### Step 6 Cook until the mixture becomes a deep amber. ### Step 7 Kill the heat and add in the toasted pecans and give the mixture a stir to ensure that the pecans are well coated. ### Step 8 Add the baking soda and salt mixture that'll cause a foaming effect and stir rapidly. ### Step 9 Quickly transfer the mixture to a sheet pan lined with parchment paper while the mixture is till hot and spread into a single layer. ### Step 10 Let cool to room temperature for about 2 hours and break up into small pieces. ## :link: Source - [1]: <../assets/images/pecan-brittle.jpg> [2]:
