--- comments: true tags: - condiment - sauce - dip --- # :falafel: Hummus ![Hummus](../assets/images/hummus.jpg){ loading=lazy } | :fork_and_knife_with_plate: Serves | :timer_clock: Total Time | |:----------------------------------:|:-----------------------: | | 8 | 15 minutes | ## :salt: Ingredients - :lemon: 3 Tbsp lemon juice - :droplet: 0.25 cup water - :seedling: 6 Tbsp [tahini][1] - :olive: 2 Tbsp olive oil - :falafel: 1 14-oz can chickpeas - :garlic: 1 clove garlic - :salt: 0.5 tsp salt - :herb: 0.25 tsp cumin - :hot_pepper: 1 pinch cayenne - :herb: 1 Tbsp cilantro - :herb: 1 Tbsp parsley ## :cooking: Cookware - 2 small bowl or measuring cup - 1 food processor - 1 plastic wrap ## :pencil: Instructions ### Step 1 Combine lemon juice and water in a small bowl or measuring cup. ### Step 2 Whisk together [tahini][1] and 2 tablespoons olive oil in second small bowl or measuring cup. ### Step 3 Set aside 2 tablespoons chickpeas for garnish. ### Step 4 Process remaining chickpeas, garlic, salt, cumin, and cayenne in food processor until almost fully ground, about 15 seconds. ### Step 5 With machine running, add lemon juice-water mixture in steady stream through feed tube. ### Step 6 Scrape down bowl and continue to process for 1 minute. ### Step 7 With machine running, add oil-tahini mixture in steady stream through feed tube and continue to process until hummus is smooth and creamy (about 15 seconds, scraping down bowl as needed). ### Step 8 Transfer hummus to serving bowl and sprinkle with reserved chickpeas and cilantro or parsley leaves over surface. ### Step 9 Cover with plastic wrap and let stand until flavors meld, at least 30 minutes. ### Step 10 Drizzle with olive oil and serve. ## :link: Source - [1]: <./tahini.md>
