--- comments: true tags: - sauce - joy-of-cooking - pesto --- # :herb: Joy of Cooking Pesto ![Joy of Cooking Pesto](../../assets/images/joy-of-cooking-pesto.jpg){ loading=lazy } | :fork_and_knife_with_plate: Serves | :timer_clock: Total Time | |:----------------------------------:|:-----------------------: | | 1 cup | 20 minutes | ## :salt: Ingredients - :herb: 2 cups basil leaves - :cheese_wedge: 0.5 cup Parmesan - :chestnut: 0.33 cup pine nuts - :garlic: 2 cloves garlic - :olive: 0.5 cup olive oil - :salt: some salt - :salt: some pepper ## :cooking: Cookware - 1 skillet - 1 food processor ## :pencil: Instructions ### Step 1 Toast pine nuts in a skillet. ### Step 2 Combine in a food processor and process to a rough paste basil leaves, grated Parmesan, pine nuts, and garlic. ### Step 3 With the machine running, slowly add olive oil, or as needed. ### Step 4 If the pesto seems try (it should be a thick paste), add a little more olive oil. Season to taste with salt and pepper. ### Step 5 Use immediately, or pour a very thin film of olive oil over the top, cover, and refrigerate for up to 1 week. ## :link: Source - Joy of Cooking
