--- comments: true tags: - side - jamie-oliver --- # :cucumber: Balsamic-Dressed Cucumber with Olives ![Balsamic-Dressed Cucumber with Olives][1]{ loading=lazy } | :fork_and_knife_with_plate: Serves | :timer_clock: Total Time | |:----------------------------------:|:-----------------------: | | 6 | 10 minutes | ## :salt: Ingredients - :cucumber: 2 cucumber - :olive: 10 black olives - :seedling: 3 spring onions - :hot_pepper: 0.5 red chili (optional) - :sake: 2 Tbsp balsamic vinegar - :olive: 4 Tbsp olive oil - :lemon: 0.5 lemon - :salt: some black pepper - :herb: 6 sprigs mint ## :cooking: Cookware - 1 chopping board - 1 knife - 1 mixing bowl ## :pencil: Instructions ### Step 1 Run a fork down the length of the cucumber until it’s stripy all over. ### Step 2 On a chopping board, use a knife to chop off the ends. ### Step 3 Carefully cut them in half across the middle, then in half lengthways. ### Step 4 Use a teaspoon to gently scoop out and discard the seeds. ### Step 5 Chop the cucumber up into 1 cm chunks and place in a mixing bowl. ### Step 6 Place the black olives on a chopping board, squash them with the heel of your hand, pull out and discard the stones, then roughly chop them and add them to the bowl. ### Step 7 Trim and finely slice the spring onions and add them to the bowl. ### Step 8 Chop and add a red chili (optional) to the bowl. ### Step 9 Add the balsamic vinegar and 4 tablespoons of extra virgin olive oil. ### Step 10 Squeeze in the juice of 1/2 a lemon, using your fingers to catch any pips. ### Step 11 Sprinkle over a pinch of black pepper. ### Step 12 Pick and tear over the mint leaves, toss everything together, then serve. ## :link: Source - [1]: <../assets/images/balsamic-dressed-cucumber-with-olives.jpg>
