--- comments: true tags: - salad - lunch - vegan --- # Beach Day Chickpea Salad | :timer_clock: Total Time | |:-----------------------: | | 10 minutes | ## :salt: Ingredients - 0.25 cup raisins - 1 can chickpeas, drained - 2 celery stalks, diced - 2 Tbsp chopped parsley - 2 Tbsp whole grain mustard - 2 Tbsp lemon juice - 2 Tbsp olive oil - some salt - some pepper ## :pencil: Instructions ### Step 1 Soak the raisins in warm water for 5 minutes to soften, then drain. ### Step 2 Coarsely chop the raisins and add them to the chickpeas, drained. ### Step 3 Add celery stalks, diced, chopped parsley, whole grain mustard, lemon juice, olive oil, and salt and pepper to taste, and stir well to combine.
