--- comments: true tags: - side --- # :potato: Greek Style Lemon Roasted Potatoes ![Greek Style Lemon Roasted Potatoes][1]{ loading=lazy } | :timer_clock: Total Time | |:-----------------------: | | 60 minutes | ## :salt: Ingredients - :potato: 1.5 lbs yellow potatoes - :olive: 0.5 cup olive oil - :stew: 1 cup chicken broth - :salt: 2 tsp salt - :herb: 2 tsp oregano - :bell_pepper: 1 tsp paprika - :salt: 0.5 tsp pepper - :lemon: 1 lemon juice - :herb: 1 sprig rosemary - :herb: some parsley (optional) ## :cooking: Cookware - 1 9x13" casserole or baking dish ## :pencil: Instructions ### Step 1 Preheat oven to 400° F or 375°F if using convection. ### Step 2 Mix yellow potatoes, olive oil, chicken broth, salt, oregano, paprika, pepper, lemon juice, and rosemary in a 9x13" casserole or baking dish. Roast for 1 hour, gently stirring 2 to 3 times toward the end.
