--- comments: true tags: - side - the-gracias-madre-cookbook --- # :rice: Green Rice ![Green Rice][1]{ loading=lazy } | :fork_and_knife_with_plate: Serves | :timer_clock: Total Time | |:----------------------------------:|:-----------------------: | | 3 cups | 30 minutes | ## :salt: Ingredients - :leafy_green: 1 cup packed spinach - :herb: 0.25 cup packed cilantro - :salt: 1 tsp salt - :droplet: 1.75 cup water - :olive: 1 Tbsp olive oil - :onion: 0.5 cup yellow onion - :garlic: 2 cloves garlic - :rice: 1 cup basmati rice ## :cooking: Cookware - 1 high-speed blender - 1 medium saucepan - 1 fork ## :pencil: Instructions ### Step 1 In a high-speed blender, add the spinach, cilantro, salt, and 1.75 cups of water and blend until smooth. ### Step 2 In a medium saucepan over medium heat, heat the olive oil. Add the yellow onion and garlic and cook, stirring occasionally, until the onions start to look translucent, about 5 minutes. ### Step 3 Add the basmati rice and the blended spinach mixture and stir to combine. ### Step 4 Increase the heat to high and bring to a boil.
