--- comments: true tags: - bites - side - applied-kitchen --- # :grapes: No Bake Sunshine Energy Bites ![No Bake Sunshine Energy Bites](../assets/images/no-bake-sunshine-energy-bites.png){ loading=lazy } | :fork_and_knife_with_plate: Serves | :timer_clock: Total Time | |:----------------------------------:|:-----------------------: | | 25 | 5 minutes | ## :salt: Ingredients - :grapes: 5 medjool dates - :chestnut: 1 cup raw pistachios - :chestnut: 1 cup raw walnuts - :curry: 1 Tbsp turmeric powder[^1] - :salt: 0.13 tsp salt - :salt: 0.13 tsp black pepper - :icecream: 1 tsp vanilla - :chocolate_bar: 0.5 cup white chocolate chips - :coconut: 1.25 cup shredded coconut ## :cooking: Cookware - 1 food processor or blender - 1 spoon ## :pencil: Instructions ### Step 1 Soak the medjool dates in hot water for 2 to 3 minutes. ### Step 2 Place raw pistachios and raw walnuts into a food processor or blender. Blend until tiny pieces are formed. ### Step 3 Add turmeric powder[^1], salt, black pepper, vanilla extract and dates. Blend again until the dates are fully incorporated into the mixture. ### Step 4 Add white chocolate chips and 1 cup of shredded coconut to the mixture. Blend quickly until incorporated (approximately 5 seconds). ### Step 5 With a spoon, scoop out a bit of the mixture, roll it into a small, 1 inch ball and then top with remaining shredded coconut.
