Sauté chopped onion and diced carrots for 5 minutes. ### Step 2 Add minced garlic and sauté for 1 minute more. ### Step 3 Stir in vegetable stock, dried red lentils, corn, cumin, curry, saffron, cayenne, salt and pepper. ### Step 4 Bring to a boil then simmer for 15 minutes. ### Step 5 Blend with immersion blender and add zest and juice of 1 lemon.
