--- comments: true tags: - stew - slow-cooker --- # :peanut: Slow Cooker Vegan African Peanut Stew ![Slow Cooker Vegan African Peanut Stew](../assets/images/slow-cooker-vegan-african-peanut-stew.png){ loading=lazy } | :fork_and_knife_with_plate: Serves | :timer_clock: Total Time | |:----------------------------------:|:-----------------------: | | 6 | 8.25 hours | ## :salt: Ingredients - :falafel: 1 15-oz can [chickpeas][1] (drained) - :stew: 4 cups [vegetable broth][2] - :salt: 0.5 tsp salt - :herb: 1 tsp cumin - :herb: 0.5 tsp coriander - :hot_pepper: 0.25 tsp cayenne - :tomato: 1 15-oz can diced tomatoes - :peanuts: 0.5 cup peanut butter - :sweet_potato: 5 cups sweet potatoes, cut into 2" cubes - :onion: 1 onion, diced - :garlic: 4 cloves garlic, minced - :sweet_potato: 1 inch ginger, grated - :leafy_green: 4 handfuls spinach ## :cooking: Cookware - 1 slow cooker - 1 immersion blender ## :pencil: Instructions ### Step 1 Put [chickpeas][1] (drained), [vegetable broth][2], salt, cumin, coriander, cayenne, diced tomatoes, peanut butter, sweet potatoes, cut into 2" cubes, onion, diced, garlic, minced, and ginger, grated in slow cooker. ### Step 2 Cook on low for 6 to 8 hours. ### Step 3 Stir in spinach just before serving and cook 15 minutes more. ### Step 4 Use immersion blender to thicken to taste.
