--- comments: true tags: - bowl - vegan - main --- # :green_salad: Greens & Grains Bowls ![Greens and Grains Bowls](../assets/images/greens-and-grains-bowls.jpg){ loading=lazy } | :fork_and_knife_with_plate: Serves | :timer_clock: Total Time | |:----------------------------------:|:-----------------------: | | 6 | 10 minutes | ## :salt: Ingredients - :rice: 4 cups brown rice - :sweet_potato: 4 cups sweet potato - :canned_food: 1 15-oz can black beans - :bell_pepper: 2 cups bell pepper - :leafy_green: 6 cups raw spinach or kale - :mango: 1.5 cups fresh or frozen mango chunks - :ear_of_rice: 4 Tbsp flax seed meal - :sake: 4 Tbsp red wine vinegar - :onion: 1 Tbsp chopped shallot - :hotdog: 1 tsp Dijon mustard - :salt: 1 tsp salt - :droplet: 0.5 cup water - :maple_leaf: 2 Tbsp maple syrup ## :cooking: Cookware - 1 large bowl - 1 blender ## :pencil: Instructions ### Step 1 In a large bowl, mix together cooked brown rice, cooked sweet potato, black beans, chopped bell pepper, and raw spinach or kale. ### Step 2 In a blender, combine fresh or frozen mango chunks, flax seed meal, red wine vinegar, chopped shallot, Dijon mustard, salt, water, and maple syrup. ### Step 3 Puree until very smooth. Pour over rice and bean mixture. Combine well and serve.
