--- comments: true tags: - vegetarian - vegan --- # Vegan Baked Beans ![Vegan Baked Beans][1]{ loading=lazy } | :fork_and_knife_with_plate: Serves | :timer_clock: Total Time | |:----------------------------------:|:-----------------------: | | 12 | 5.50 hours | ## :salt: Ingredients - :potato: 16 oz dried great northern beans - :potato: 2 cups bean juice - :stew: 2 cups vegetable broth - :onion: 1 onion - :garlic: 4 cloves garlic - :hot_pepper: 0.5 jalapeno pepper - :bell_pepper: 1 green bell pepper - :salt: 1 tsp salt - :tomato: 6 oz tomato paste - :maple_leaf: 0.25 cup molasses - :maple_leaf: 0.25 cup brown sugar - :hotdog: 1 Tbsp yellow mustard - :apple: 1 tsp apple cider vinegar - :salt: 0.25 tsp ground pepper - :hot_pepper: 0.25 tsp chipotle chili powder - :hot_pepper: 1 tsp chipotle in adobo (alternative) ## :cooking: Cookware - 1 crock pot (optional) ## :pencil: Instructions ### Step 1 Soak dried great northern beans overnight in several inches water. ### Step 2 Drain and rinse beans next morning. ### Step 3 Add enough water to cover and bring to a boil. ### Step 4 As soon as the beans begin to boil, remove from heat and cover. ### Step 5 Let rest 30 minutes. ### Step 6 Drain and rinse beans, reserving 2 cups bean juice. ### Step 7 Add beans back into pot, with 2 cups bean juice. ### Step 8 Add vegetable broth, diced onion, garlic, jalapeno pepper, finely diced green bell pepper and salt. ### Step 9 Bring to a boil again and simmer on low for 1 hour. ### Step 10 Add mixture to crock pot (optional). ### Step 11 Add tomato paste, molasses, brown sugar, yellow mustard, apple cider vinegar, ground pepper, and chipotle chili powder or chipotle in adobo (alternative) and slow cook on low 2 to 4 hours. ## :link: Source - [1]: <../assets/images/vegan-baked-beans.jpg>
